‘Naked’ or ‘Rustic’ Wedding cake

I have been asked to make this cake at a couple of wedding fayres, and was extremely popular when I exhibited it. This example was made on  5″, 7″ and 9″ based sponges. Two were filled with jam & buttercream, the middle tier had lemon curd & buttercream. When the fayre was over, the cakes were distributed and were still very moist the next day. Fruits included strawberries, raspberries, and blueberries, as these were in season at the time of making. Obviously, the fruits would vary depending on the season.
